Ingredients
  

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • ½ cup sugar
  • ¼ cup melted butter
  • 1 egg
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Prepare the muffin pan by brushing the mini muffin tins with butter or spraying with nonstick cooking spray.
  • In a bowl, mix the mashed bananas, melted butter, sugar, egg, and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Combine the dry ingredients with the wet mixture, stirring until just blended.
  • Spoon the batter into the prepared mini muffin tins, filling each cup about 3/4 full.
  • Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
