- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 cups chicken broth
- ¼ cup all-purpose flour
- ½ cup milk
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Warm the olive oil in a large skillet over medium-high heat.
Season the chicken breasts with salt and pepper, then add them to the hot pan. Cook each side for 4-5 minutes, until it turns golden brown and is fully cooked.
Remove the chicken from the pan and set aside.
In the same pan, sauté the minced garlic for 1 minute until fragrant.
Whisk in the flour to create a roux, and cook for 2 minutes, stirring constantly.
Slowly add the chicken broth, whisking constantly to avoid forming lumps.
Stir in the milk and dried thyme, and season with additional salt and pepper to taste.
Reduce the heat to medium-low and let the gravy simmer, stirring occasionally, until it thickens, about 5-7 minutes.
Return the cooked chicken to the pan and coat with the delicious gravy.
Serve the chicken and gravy immediately, garnished with fresh parsley if desired. Enjoy!
